Acetaia Bertoni (Italy)

Acetaia Bertoni is a family-run and traditionally run company in Casalgrande near Modena, which bases its production of its balsamic vinegars on the traditional manufacturing processes and the strict rules of the control consortium. Lelio Bertoni and his sons Milo and Roberto have guaranteed the quality and originality of their balsamic vinegars since 1936, which are always a special treat in every form. They offer a wide range of balsamic vinegars, which can be used in a variety of ways.

Acetaia Dodi from the Emilia Romagna region (Italy)


The history of Acetaia Dodi began in Gavasetto in the Emilia Romagna region in 1891 when Carmelina Ligabue, Ricordano Dodi's grandmother, was born. Her father, as is the tradition in the region, set up a battery (at least 5 barrels) of balsamic vinegar for his daughter as a dowry. When Carmelina married Ricardino Dodi in 1915, she took the barrels with her to her family. Carmelina and Ricardino passed the tradition on to their first-born son Rolando. To date, the delicious balsamic vinegars on the storage of Acetaia mature near the monastery Canossa, in precious wood barrels from woods such as cherry, juniper, ash and chestnut and convince with their exceptional flavors.
